Leftovers That Improve Rather Than Degrade
Some dishes genuinely taste better the next day because of diffusion and starch changes, while others deteriorate, and the difference is predictable.

The claim that a stew improves overnight is not sentiment. Specific physical processes continue in the fridge, and knowing which dishes benefit tells you what is worth cooking in quantity.
Diffusion continues after the heat is off
Salt, acid and dissolved aromatic compounds move from areas of high concentration to low until they are evenly distributed, and that process does not stop when cooking ends.
In a stew cooked for an hour, the interior of a large bean or potato is still less seasoned than the surrounding liquid. Overnight resting closes that gap.
The result is a dish that tastes more integrated rather than more strongly of anything in particular. Individual components taste of the whole dish rather than of themselves.
Starch retrogradation and thickening
Starch granules that gelatinised during cooking begin to reassociate as the dish cools, and their chains form a loose network that thickens the liquid.
This is why a soup that was thin when served sets to a spoonable consistency in the fridge, and why bean dishes become noticeably denser overnight.
Reheating with added liquid reverses most of it. The same process is what makes bread go stale, where there is no liquid to add back.
What deteriorates instead
Anything whose appeal depends on a texture contrast loses it, because moisture equalises across the dish during storage.
Fried elements soften, salads wilt, herbs darken, and dishes with a crisp topping become uniformly soft. None of that is recoverable by reheating.
Delicate green vegetables also lose colour, as residual acids gradually convert their chlorophyll into a duller olive-brown compound.
Cooking with the second day in mind
The straightforward approach is to cook the durable base in quantity and add the fragile parts fresh each time it is served.
A pot of stew, a tray of roast vegetables or a pan of dal all hold well. The herbs, the acid, the crisp topping and the raw element go on at the plate.
Storing components separately rather than as an assembled meal makes this possible without extra cooking, and gives more variation across the week.
Practical handling
Cooling quickly and refrigerating promptly matters for safety, particularly with cooked rice and cooked pulses, which support bacterial growth readily at room temperature.
Shallow containers cool faster than deep ones, and dividing a large pot into portions before refrigerating does more for safety than any other single step.
Reheating thoroughly rather than merely warming is the corresponding rule at the other end, and it applies whatever the dish.
