Thickening A Sauce Without Dairy
Thickness comes from starch gelatinization, plant gums, emulsified fat or pureed solids, and each behaves differently under heat, acid and reheating.

Sauces built without cream or butter still need body, and several distinct mechanisms can supply it. Choosing among them depends on how the sauce will be heated and stored.
Starch gelatinization
Starch granules absorb water and swell when heated past a threshold temperature, then release long molecules that tangle and thicken the liquid around them.
Cornstarch and arrowroot are added as a slurry in cold liquid, because dropping dry powder into hot liquid forms sealed lumps that never hydrate inside.
Flour-based roux works differently, dispersing starch in fat first. Cooking the roux longer develops flavor but reduces thickening power, since heat breaks the starch molecules down.
The stability differences that matter
Cornstarch sets to an opaque, slightly glossy body and tolerates reheating poorly once frozen. Arrowroot stays clearer and handles acid better but breaks down under prolonged boiling.
Tapioca starch holds up through freezing and thawing, which suits sauces made for the freezer. Potato starch thickens at lower temperatures and thins quickly if held at a boil.
These differences explain why a recipe naming a specific starch is often making a real choice rather than an arbitrary one.
Gums and hydrocolloids
Xanthan gum, familiar from the labels of many commercial plant milks and dressings, thickens without heat and in very small amounts. It resists acid, salt and temperature swings.
Its behavior is different in character. Gums build viscosity that feels slippery rather than creamy, and excess produces a distinctly gluey texture that cannot be corrected.
Ground flaxseed and chia produce similar mucilage from soluble fiber. They thicken effectively but add their own flavor and color to a sauce.
Fat, emulsions and pureed solids
Blended cashews, tahini and silken tofu thicken by contributing both solid particles and emulsified fat. The dispersed droplets crowd the liquid and slow it down.
Emulsions can break if boiled hard or if acid is added too quickly. Warming gently and adding acid at the end keeps them intact.
Pureed vegetables thicken by bulk alone. Cooked cauliflower, white beans, squash and potato all supply body without any specialized ingredient.
Reduction, the method with no additions
Simmering uncovered evaporates water and concentrates whatever solids are already present. Nothing is added, and flavor intensifies alongside thickness.
The cost is salt concentration and time. A sauce reduced substantially becomes noticeably saltier, so seasoning is better judged afterward.
Combining approaches is common in practice. A tomato sauce reduced somewhat and finished with a spoonful of cashew cream carries body from both routes at once.
