Steaming Versus Boiling And What Is Lost
Water-soluble vitamins and minerals leach into cooking water, so the nutrient difference between steaming and boiling depends mostly on whether the water is used.

Steaming is routinely described as the healthier way to cook vegetables. The claim is roughly correct but for a narrower reason than most people assume, and it comes with exceptions.
The leaching mechanism
Water-soluble compounds move out of plant tissue into surrounding water along a concentration gradient, and heat accelerates the movement by damaging cell membranes.
Vitamin C, the B vitamins, potassium and some minerals all migrate this way. The loss is not destruction; the nutrients are in the pot rather than the vegetable.
Steaming limits contact between food and liquid water, so less migrates. The vegetable is heated by condensing steam rather than immersed.
Heat degradation as a separate loss
Vitamin C and folate are also destroyed by heat and by oxygen, and that loss is genuine rather than a transfer.
Steam is slightly hotter than boiling water at the surface of the food, so degradation can be marginally faster while leaching is much lower.
Total cooking time usually matters more than method. A vegetable steamed to collapse loses more than one briefly boiled.
When boiling is the better choice
If the cooking liquid becomes part of the dish, leaching costs nothing. Soups, stews, dals and risottos retain everything that migrates.
Boiling is also the effective way to reduce soluble oxalate in high-oxalate greens, because the oxalate leaves with the discarded water.
Large volumes of rapidly boiling water preserve colour in green vegetables better than a small pan, because the temperature recovers quickly and cooking time stays short.
What each method does to texture
Steam transfers heat more gently and evenly, which suits delicate items that would break apart when agitated in boiling water.
Boiling moves water around the food constantly, which cooks faster and more uniformly through dense pieces such as potatoes or whole roots.
Neither browns anything. Both operate at or near the boiling point, below the threshold where the flavour-building reactions of roasting begin.
Ranking methods sensibly
The nutrient differences between reasonable cooking methods are smaller than the difference between eating vegetables and not eating them.
Method choice is better made on flavour and texture, with the leaching principle applied as a simple habit: keep the liquid where it makes sense to keep it.
Cooking also improves availability of carotenoids and some minerals by breaking down cell walls, so raw is not automatically the higher-nutrient option either.
