Vitamin E And Which Plant Fats Carry It
Vitamin E is a family of related compounds concentrated in seed oils, nuts and seeds, and only one form counts toward the requirement as it is currently defined.

Vitamin E is not one substance. It is a group of eight related compounds, and how the requirement is defined narrows that group considerably.
Eight compounds, one that counts
The family divides into four tocopherols and four tocotrienols, each existing in alpha, beta, gamma and delta forms distinguished by small structural differences.
Current reference intakes in the United States count only alpha-tocopherol, because it is the form a specific liver transport protein preferentially retains and circulates.
Gamma-tocopherol is actually the most abundant form in the American diet, arriving largely from soybean and corn oils, but it does not count toward the stated requirement.
What the vitamin does
Alpha-tocopherol is fat-soluble and sits within cell membranes, where it interrupts chain reactions that would otherwise propagate damage through membrane lipids.
Polyunsaturated fats are the most vulnerable to that damage, which creates a relationship between how much of them a diet contains and how much vitamin E it needs.
Conveniently, foods rich in polyunsaturated fats tend to carry vitamin E with them. The oil and its protection generally arrive together in whole foods.
Where it concentrates in plant foods
Sunflower seeds and sunflower oil are among the densest sources of alpha-tocopherol specifically. Almonds, hazelnuts and wheat germ follow closely.
Avocado, leafy greens, peanuts and olive oil contribute meaningful amounts. Most plant-based diets that include nuts and seeds reach adequate intakes without particular effort.
Diets that minimize all added fats and limit nuts and seeds are the pattern where intake could reasonably fall short, since the vitamin travels with fat by definition.
Absorption requires fat in the meal
As a fat-soluble vitamin, vitamin E depends on dietary fat to trigger bile release and form the mixed micelles that carry it across the intestinal wall.
This is rarely a problem in practice, because the foods supplying it are themselves fatty. The vitamin arrives with its own transport conditions.
Medical conditions affecting fat absorption change this substantially, and deficiency in developed countries is usually secondary to such conditions rather than to diet.
Why heat and time reduce it
Vitamin E degrades with prolonged heating, exposure to air and light, which is why oils stored in clear bottles near a stove lose it faster.
Repeated high-temperature frying is particularly destructive, since the vitamin is consumed protecting the oil itself from oxidation. It is being used, not merely lost.
Buying nuts, seeds and oils in quantities that will be used reasonably quickly, and storing them cool and dark, preserves both the fats and the vitamin protecting them.
