Why Mycoprotein Has A Fibrous Structure
Fungal biomass grows as long filaments that align into bundles, giving mycoprotein a texture built by the organism itself rather than by extrusion or shaping.

Most meat alternatives obtain their texture through processing that forces protein into fibers. One category arrives with fibers already formed, because the organism grew that way.
Filamentous growth builds the texture
Filamentous fungi grow as hyphae, long thread-like cells that extend at their tips and branch. The result is a network of filaments rather than discrete round cells.
Grown in a fermenter on a carbohydrate feedstock, that network is harvested as a mass of aligned filaments with dimensions broadly comparable to muscle fibers.
Because the structure is biological rather than imposed, the resulting material has a fibrous bite before any texturization step is applied.
What the harvested material contains
Fungal biomass carries protein, dietary fiber from the cell walls, and small amounts of fat. The fiber component is chitin and beta-glucans rather than plant fiber.
Nucleic acid content is high in rapidly growing microbial cells, so a processing step reduces it before the material is used as food.
The protein is a complete mixture of amino acids in the sense that all nine essentials are present, since it is the organism's own cellular protein.
Binding turns biomass into a product
Harvested biomass alone does not hold together in slices or pieces, so a binding ingredient is added and the mixture is set by heating and chilling.
Egg white has historically served that role, which means some products in this category are vegetarian rather than vegan. Formulations differ by product.
Plant-based binders including potato and pea proteins are used in vegan versions, so the label rather than the category determines what a specific package contains.
How it differs from extruded plant protein
Textured plant proteins gain their structure from extrusion, where protein is forced through a die under heat and shear so that molecules align into fibers.
That process requires starting from a concentrated protein isolate or concentrate, so the fiber and other components of the source plant were removed earlier.
The fungal route retains the organism's own cell wall material, which is why fiber content differs noticeably between the two categories of product.
Where it sits in a diet
These are processed foods, formulated with salt, flavorings and binders, so the panel and ingredient list describe them better than the protein source alone.
They serve the same practical role as other alternatives, providing a familiar format for people changing what they eat without changing how they cook.
Some people report digestive sensitivity or allergic reactions to fungal proteins, which is a matter for a physician rather than something to work through by trial.
