Labeled vegan options frequently exist as one item at one station, which makes them a single point of failure when the item is unappealing or unavailable.
The salad bar is the underused resource
Salad bars typically carry beans, chickpeas, seeds, nuts and sometimes tofu alongside vegetables, which are the protein components most often missing elsewhere.
Treating it as a component source rather than as a salad station allows those items to be added to hot dishes from other stations.

Hidden ingredients are a real question
Stocks, butter finishes and dairy-based sauces are common in institutional cooking and are not always reflected in station signage.
Campus dining programs typically employ or contract a registered dietitian, and asking them is more reliable than asking service staff at a station.
Ingredient information is increasingly published online for campus menus, which makes planning possible before arriving at the hall.
Where nutritional gaps tend to open
Protein is the component most easily under-supplied, because it requires seeking out legumes or tofu rather than accepting the default plate.
Vitamin B12 does not occur in unfortified plant foods, so a student relying entirely on dining hall food should know which sources on campus are fortified.
Iron and calcium both depend on specific foods rather than general variety, and dining hall meals vary enough day to day that intake is inconsistent.
Practical steps in the first weeks
Keeping shelf-stable staples in a room, such as fortified plant milk, nuts, dried fruit and instant oats, covers the meals when the hall offers little.
Meal plan structures vary considerably between institutions, and understanding what the plan actually permits shapes how much flexibility exists.
A student making a substantial dietary change while also changing environment, schedule and stress level has several variables moving at once, and a check-in with campus health services is a reasonable step rather than an overreaction.
