Proteins Made By Fermentation Rather Than Farming

A growing category of food ingredients is neither harvested from a plant nor taken from an animal. It is produced by microorganisms grown in tanks, and the distinction matters nutritionally and legally.

How the process works

Microorganisms such as yeasts or bacteria are given genetic instructions for a particular protein, then grown in vessels on a feedstock of sugars and nutrients.

As they grow, the organisms manufacture the specified protein and release or accumulate it. The protein is then separated and purified from the culture broth.

The approach has long been used to make enzymes, including the coagulant used in most American cheese production, and insulin for medical use. Food proteins are a newer application.

Why the categories blur

The resulting protein may be structurally identical to one found in milk or egg, even though no animal was involved in producing it.

That creates a genuine question for anyone avoiding animal products for allergy reasons, since an identical protein carries identical allergenic potential.

People avoiding animal products for ethical or environmental reasons reach different conclusions about these ingredients, and the disagreement is about definitions rather than about facts.

Fermentation-derived biomass is different again

A separate category grows the organism itself as the food, harvesting the whole microbial mass rather than extracting one protein from it.

Filamentous fungi grown this way produce a fibrous material with its own protein content, fiber and micronutrients, rather than a purified single protein.

These products are whole ingredients in the way a legume is, carrying a full profile including cell wall material, rather than an isolated component.

Regulatory review in the United States

New food ingredients in the United States generally reach market either through a food additive petition or by being determined generally recognized as safe.

Companies typically submit their safety evidence to the Food and Drug Administration for review, and the agency may respond with a letter stating it has no questions.

Allergen labeling obligations follow the protein rather than its origin, so a fermentation-derived dairy protein is subject to milk allergen disclosure requirements.

How to think about them nutritionally

A purified protein contributes amino acids and little else, which places it alongside other isolates rather than alongside whole foods.

Products built on them are formulated foods, so the full ingredient list and the panel describe what is actually being eaten better than the protein source does.

None of this makes them necessary. A diet built on legumes, soy, grains, nuts and seeds meets protein needs without any of these ingredients, and they are best understood as additional options rather than improvements.
